     At 5:30 this morning it was cold. I walked out to the greenhouse to put wood in the stove and it was about as cold as I can remember. I am admittedly quite old but my memory is also very selective. The wind chill is around -30 degrees right now. I remember one spell several years ago when it dropped to about -34.Several gravenstein apple trees died the following spring from the injury.
     I have been talking with Sean at Local Source catering in Halifax about the winter CSA. We are planning to process some of our produce to supplement the CSA boxes over the next few weeks. This would include ideas like pear butter, applesauce, saurkraut, and pickled beets/radish/carrots. At most, the boxes could include one processed food item (from Local Source with our product) in a given week. The intention of this is to keep the boxes interesting during the darkest days of winter and also to use up those products that we have an oversupply of. We welcome comments on this idea, whether positive or negative. As mentioned before, I expect more fresh products like spinach and other greens to be plentiful in a month or so.
