This past week, after five days of sun, the land has dried enough to get our weeding started again and continue planting. We expect many new crops over the next 3-4 weeks. These include napa cabbage, bunched carrots, zucchini, snap peas, snow peas, shell peas, cucumbers, cilantro, and green and yellow beans. This week we are seeding in the greenhouse for late fall vegetables. We seed every ten days from mid February through August. The intention of this is to have a large selection of fresh vegetables for an extended season. We are pleased that each day more people are signing up for CSA membership. We hope that with increased participation in the program it will become a long-term viable part of our farm. This week we hope to include in the standard CSA box-- cilantro
- snap peas
- bunched carrots
- kale
- shanghai pak choi
- hakurai turnips
- apples
- salad mix
Many people are quite familiar with kale but if you're not here's a few ideas of what to do with it. Kale and Potatoes - strip the kale off its stem, discard the stem. Wash the kale leaves in a collinder. Boil kale and potatoes along with some chopped up onion until the potatoes and kale are tenders. Mash together with a little milk and butter just like mashed potatoes. This is how we feed kale to our kids.
Sauted Kale - saute kale in a skillet with a dash of olive oil and salt(only the leaves,again strip from stem) . Add to this onions, garlic, shredded carrots or whatever you like.
Kale chips Strip kale from stem, toss lightly with salt and olive, spread on cookie sheet and bake until crispy.
Kale can be added to soups and salads. Kale is a good source of antioxidants and fiber, vitamin k, vitamin c and calcium.
