It been very busy on the farm now for a few weeks. We seed, transplant, weed, and harvest continually. Many new greens are ready each week and other crops are getting close. I ate a couple of undersize snap peas yesterday. Zucchini plants are in bud and carrots have tops on them about four inches high. Things look good in general, but the soil is dry. One of my customers is teaming up with us to offer recipes weekly that are relevant to the weekly CSA box. Her name is Selah Koile. We have not finalized the format of the recipes yet. We may just have a link in each newsletter to her website once we are better organized. Here is this weeks ideas.
Weekly Food Box Inspiration- May 20th 2012By: Selah Koile & Joshua Koile Smooth Tart- Rhubarb Dressing 2C Chopped rhubarb 4 tbsp Water 2 tbsp Honey ΒΌ C. Sunflower oil Optional seasonings: fresh grated ginger or basil to taste - On medium heat, simmer the rhubarb and water for 5 minutes or until soft.
- With a blender combine the soft rhubarb with the honey and oil.
- The dressing will be smooth and pink and have a creamy texture.
- Optional: add fresh ginger or basil to your preferred taste.
The following are some salad ideas made primarily from food box ingredients. Spring Zing SaladMixed salad greens, sliced apples, soft goat cheese and toasted sunflower seeds drizzled in rhubarb dressing. Warm Wilted SaladCaramelized shallots with wilted beet greens and swiss chard, topped with toasted pumpkin seeds or walnuts, soft goat cheese and rhubarb dressing. Refreshing Apple SaladChopped apples and fresh mint covered in rhubarb dressing with optional side of ricotta or Greek yogurt. Selah R. Koile |
